Paleo Challenge Day 1

Well…the challenge has begun. I had already started prepping myself for this day so thankfully it isn’t a huge change in my normal eating habits, but just walking through the grocery store certainly proved to be very tempting. I was able to get lots of good healthy meat, veggies and some fruit.

Didn’t get up hungry enough for breakfast, but I did end up having breakfast for lunch. Just a couple of good cage free organic eggs scrambled with red bell pepper, tomatoes, cumin, chili powder and a touch of coconut milk to make them fluffy.

Dinner tonight should be good. I am starting off nice and easy with some chicken fajitas. There will be lots of good grilled veggies including bell pepper, onion, yellow squash and some egg plant just for fun (and because I need to use it up before it goes bad). So I don’t miss the tortillas, rice and beans, I will be making some fresh guacamole to keep it very flavorful. Here’s hoping there are plenty of leftovers for my lunch tomorrow!
