Paleo Challenge Day 8

Well today was a nice and lazy day. It’s been very cold out so we spent most of the day at home, cuddled up planning our trips for the next few months! Can’t go wrong there!

Today was a nearly perfect paleo day and left me completely full if not a little carb overloaded.
Breakfast started off with some great pumpkin pancakes! It was 1 can pumpkin, 1/3 jar of almond butter, 4 eggs, a sprinkle of cinnamon and a splash of vanilla. It made quite a bit extra so I’ll have plenty for the week.
Lunch was some leftover shredded rotisserie chicken in lettuce cups with avocado, roasted peppers, tomatoes and sundried tomatoes.
Dinner was wonderful as well! I had some wine with it so it wasn’t 100% paleo, but the rest of the meal was great. We had grass fed t-bones paired lightly marinated with homemade sweet potato fries and a spinach salad with cucumber and tomatoes. This is my first grass fed experience it the steaks were amazingly. I also tried to make some zucchini chips…first I tried frying them and they were too soggy…then I tried making them and they burned…maybe it’ll go better next time.
We also added dessert to the mix tonight and it hit the spot. We blended a few frozen bananas with about 1/2 a can of coconut milk and a handful of blackberries. It was super creamy and sweet. Ideal dessert. Here’s looking forward to an amazing WoD tomorrow at crossfit!
