Well it has def been a while since I last posted. I have been trying to keep with the paleo diet with just the one meal off a week and for the most part it had been going pretty well. We went up to Phoenix last weekend for a friends birthday and so there was more liquor than normal but it was alway just mixed with either soda water or soda water with a splash of cranberry.
I’ve also been trying to keep up with crossfit. I will not be in town this Friday so I only got in 2 workouts this week, but they were definitely good.
Today’s: total time – 18:59

– 40 walking lunges at 35#

Below are just some of the meals we have been having. Gotta keep it up while I am in Denver this coming weekend. The challenge officially ends 1 week from today and Tough Mudder AZ is in just over a week! Can’t wait.
Chicken in a basil, sun-dried tomato sauce with brussels sprouts, rainbow chard and asparagus
Yeah for Monday and being back on the paleo bandwagon. We slept in a little bit today so I had breakfast at work: leftover hash from Saturday. I still haven’t tried that with eggs yet but hopefully that will happen tomorrow. After that I had my cherry pie larabar around 9ish.
Lunch today was leftover burgers from yesterday with a giant bag of carrots, bell peppers and celery. I still have leftovers of those so that will be snacks for tomorrow.
Crossfit today was great. The workout was: 5 rounds: 3 min AMRAP – 3 cleans (I did 95# – 135/95 RX), 6 push ups, 9 squats followed by a 1 minute rest. So – 20 min total. They only counted full rounds with no partials carried over. I got through 14 full rounds.
When I got home I had a couple of dates filled with almond butter – yum! I need to find some good paleo post workout food that I can keep in my car. I posed the question to the rest of the paleo challenge group so hopefully I get some good options.
Dinner will be AMAZING! I have a chicken roasting in the oven with thyme, lemon and garlic. Can’t wait! I will be pairing that with roast brussel sprouts with bacon and a nice salad. Can’t wait!
Ah – yeah for hump day!
This morning started off with a nice, big breakfast. I warmed up the bell pepper, shallot, mushroom, chicken mixture from last night in some coconut oil and then scrambled in 2 eggs. Yum! That held me over until 9am when I had 2 pieces of fruit leather: grape and strawberry.
Lunch today was nothing special: leftover stuffed chicken breast w/ a side salad of organic greens, strawberries, cashews, sun-dried tomatoes with some lemon juice to act as a dressing. Then, before crossfit I had a little bit of shredded chicken.
Crossfit today was a blast. After a quick warmup we had 15 minutes to get our one rep max snatch. I need to work on getting low under the bar as I’m doing more of a power snatch than a traditional snatch. My max was 95 pounds. After that, we had Cindy! 20 Minute AMRAP: 5 pull ups, 10 push ups, 15 squats. I got through 9 rounds + the pull ups. My first 4 rounds were strict pull ups, the next 2 were w/ a thin black band and the last few were with an orange band. Not too bad.
I am really looking forward to dinner tonight. I am making PaleOMG’s Easy Bacon Chicken Bowl! It looks amazing. I am pairing this with a side salad of organic greens, avocado, tomato, bell pepper and cucumber.
I don’t think there will be dessert tonight. I attempted the fried plantains last night, but they tasted much starchier than sweet. So – guess I need to look up a recipe next time instead of free-wheeling it!
Yeah for Monday and crossfit!
Breakfast this morning was just a quick retake on the strawberry breakfast bar that I added a little crust to in some coconut oil. Then, I got hungry early and ate an all fruit leather …bar I guess – around 8. Eating my mornin snack this early made me very hungry around lunch time. It was tough but I held out until 1130ish before I had the last of the leftover eggplant lasagna. It was so good and I must make it again. Then, right before leaving for crossfit I had a grilled chicken breast to try and give me a pre-workout boost.
Then, came the fun, leg intensive WoD. After our warm up we had 15 minutes to practice the 3-position snatch. This was nice because I definitely need work on that. After that was the real workout: 50 walking lunges, 20 front squats (workout called for overhead squats but I modified at 75#), 20 mountain climbers per leg, 50 walking lunges, 15 front squats, 15 mountain climbers per leg, 50 walking lunges, 10 front squats, 10 mountain climbers per leg. It was intense and I was definitely shaking towards the end of my 14:22 time.
Dinner tonight is going to be nice and healthy. We are going to have chicken filled with asparagus, spinach, basil and Italian seasoning, rolled up and topped with thin slice of prosciutto. We are pairing that with sautéed kale and a nice salad – hopefully there are plenty of leftovers!
Yeah for a partial Friday off. I was able to sleep in until the husband had to get up. Then after a quick breakfast of spinach, pesto scrambled eggs I was off I crossfit.
Today’s WoD: 10 minute AMRAP of snatches. After 30 snatches, go up in weight. I did 51 total – 30 at 65 and 21 at 75.
After that I ran to the farmers market and finally home. I had to run to work for a lil over an hour and then headed home to have the final pork roast left overs.
Then, I got I relax for once. While hanging out I made some paleo crackers and cashew cheese. I’m very interested in seeing how the cheese ends up!
Dinner tonight was leftover eggplant lasagna with grilled chicken and kale. We also had a spinach salad with strawberries, blackberries and some strawberry flavored cranberries from the market. We did have a glass of wine with dinner so not 100% paleo but still darn good.
Looking forward to making paleo berry bars for breakfast tomorrow!
Well – sore from yesterday and there is more crossfit today.
The mornin started off well and I got a good night sleep so I can’t complain there. I had 2 eggs scrambled with spinach and roasted red pepper at 5:20 followed by my homemade larabars around 9. Lunch today was a bag of steam-in-bar sweet peas with a grilled chicken breast an more roasted rep pepper.
I didn’t end up having a per-workout snack. Wonder if that would help at all with my energy levels durin the workout because I am getting beat.
Today’s WoD was 5 rounds for time: 50 double unders, 10 pull ups, 50 squats. I ended up modifying and did single unders and after the first round used bands with my pull ups. I feel like I used to be better at pull ups…maybe I need to work more on that and get some good core strength in. I noticed that using the bands my body would be pushed away from the bar as opposed to keeping nice and tight. It took me 24:43 to finish. Then as part of our cool down we did some abs for good measure.
Dinner tonight was the pork and sweet potato/carrot mash leftovers but we took it to the neighbors to let them try some too. The neighbor made some organic green beans with bacon to go along with it. The pork tasted even better today than yesterday. I also tried some paleo banana bread that the neighbor had made – very good.
Here’s hoping my legs still work after all these squats we’ve been doing…
Well today was a great day! It is finally warming up again and I am loving it. Cannot wait for swimsuit weather…as
long as the crossfit workouts help out.
The day started with breakfast at home – 2 eggs over medium. Then I had another one of my homemade larabars – just as good as the real deal. Lunch was leftovers from last night. I had the cauliflower Mexican “rice” with the stuffing from the bell peppers. Then, mid afternoon before crossfit I had a grilled chicken breast.
Crossfit today was a blast. After a quick jog out warm up was dodgeball. Amazing! We split into 2 teams and there were different colored balls each exhibiting a different punishment including squats, burpies, push-ups or a 200 M jog. Then the actual workout today was 4 rounds: 1 min of double unders, 1 minute of overhead squats (65/95) then a 1 minute rest. I had to modify on both accounts. Instead of double unders I did normal jump rope and instead of overhead squats I did front squats at 65 lbs…should have been heavier. My total points (reps + jumps) was 315. Gotta work on my mobility to do better on overhead squats and need to get better at double unders.
Dinner was amazing. I have never had grass fed ground beef and was surprised at how dense it was. I mixed the meat with nitrate free bacon and made burger patties for the grill. I also grilled up some bell pepper to put on top. I served them up with some asparagus cooked in bacon grease and put lettuce and tomato on the side. I did have a little wine with dinner, so not 100% paleo, but almost.
In other news – I tried to make bread today. The flavor was okay (it was mostly flax meal so it def had a little bit of that taste) but it was just very dense and didn’t rise like normal bread. Need to find a different recipe…
