Paleo challenge day unknown….

Well it has def been a while since I last posted. I have been trying to keep with the paleo diet with just the one meal off a week and for the most part it had been going pretty well. We went up to Phoenix last weekend for a friends birthday and so there was more liquor than normal but it was alway just mixed with either soda water or soda water with a splash of cranberry.

I’ve also been trying to keep up with crossfit. I will not be in town this Friday so I only got in 2 workouts this week, but they were definitely good.

Today’s: total time – 18:59
– 300 singles
– 50 walking lunges at 45#
– 25 cal row
– 40 walking lunges at 35#
– 300 singles

Monday’s Helen: total time – 13:15
– 3 rounds:
– 400 meters in the rain
– 21 kettle bell swings at 35#
– 12 pull ups (some assisted)

Last Friday: 12 min AMRAP
– 119 wall balls at 20#

Below are just some of the meals we have been having. Gotta keep it up while I am in Denver this coming weekend. The challenge officially ends 1 week from today and Tough Mudder AZ is in just over a week! Can’t wait.

Paleo Challenge Day 31

Ah – over 30 days into the challenge and no caffeine, even on long days like today.

I began the day with the hash from Sunday in a scramble.  It was very good!  This held me over, with the help of some mint tea, until 8ish when I had my larabar.  Lunch today was a mix of leftovers.  I had a hamburger w/ a slice of bacon and the leftover shredded chicken.  It was good but for some reason I was hungry all day today!  I had a kale chip or two, some pepitas and strawberry flavored cranberries to make it through…and then had some dates w/ almond butter when I got home!  Not sure why I was starving!

Dinner tonight is going to be Beef Chop Suey.  I don’t have a recipe to follow…but we’ll see how it goes.  I’m using baby boc choy, onion, broccoli, beef and bean sprouts.  I’ll be serving it over cauliflower rice (we’re giving it one more change) for myself and real rice for the husband.  I’ll also be using coconut aminos for that soy flavor.  Here’s hoping it goes well…if not – soy may enter the mix, but we’ll try to avoid that.  Crossing my fingers that it works and ready for Crossfit tomorrow!

Paleo Challenge Day 30

Yeah for Monday and being back on the paleo bandwagon. We slept in a little bit today so I had breakfast at work: leftover hash from Saturday. I still haven’t tried that with eggs yet but hopefully that will happen tomorrow. After that I had my cherry pie larabar around 9ish.

Lunch today was leftover burgers from yesterday with a giant bag of carrots, bell peppers and celery. I still have leftovers of those so that will be snacks for tomorrow.

Crossfit today was great. The workout was: 5 rounds: 3 min AMRAP – 3 cleans (I did 95# – 135/95 RX), 6 push ups, 9 squats followed by a 1 minute rest. So – 20 min total. They only counted full rounds with no partials carried over. I got through 14 full rounds.

When I got home I had a couple of dates filled with almond butter – yum! I need to find some good paleo post workout food that I can keep in my car. I posed the question to the rest of the paleo challenge group so hopefully I get some good options.

Dinner will be AMAZING! I have a chicken roasting in the oven with thyme, lemon and garlic. Can’t wait! I will be pairing that with roast brussel sprouts with bacon and a nice salad. Can’t wait!


Paleo Challenge Day 29

Well – today is Super Bowl Sunday and became a super cheat day…

The day started off well enough with us sleeping in and not really being hungry for breakfast. Then, after making a run to the grocery store we figured it was too late to have a “real” meal before heading over to the neighbors for the festivities.  So I had a couple of dates and a cherry pie larabar which was actually really good.  I’m glad I have a few extra for the days that lie ahead.  

Then, came the party.  We brought our own steaks that I seasoned with a good dry rub and they got grilled to perfection.  The issues came when the chips came out along with guacamole (nice and paleo) and 7-layer dip (not so paleo).  I used bell pepper and cucumber for dipping some of the time, but I did definitely have some chips…and some cheese dip.  I also had a bite of a baked fruit crumble and of a cupcake, but am glad I didn’t eat real servings of either of those.  We were stuffed!  Then…we came home and made popcorn…and I had a couple of sour gummy worms.  I know – worst most sugar laden thing possible.  My stomach is not happy about everything that happened today so here’s hoping that will teach me a lesson.  

We didn’t go overboard on bread or anything, but as far as cheat days go that I have had on this adventure so far, it’s been the biggest.  Looking forward to getting back to good real food tomorrow and to get back into Crossfit!

Paleo Challenge Day 28

Saturday started off well with a trip to Market on the Move, a program where all the produce that can’t be sold to stores are sold to the public for a discount. So – for $10 you get a couple big boxes full of good produce. Today we got butternut squash, acorn squash, tomatoes, cherry tomatoes, bell peppers and eggplant.

We skipped breakfast, but made a hash for lunch. I fried up some bacon and then cooked cubed sweet potatoes, bell pepper, shredded carrot and ground turkey in the bacon fat. Then added the crumbled bacon back to it. It was very good with some cumin, chili powder and salt. It will also be great in scrambled eggs for breakfast tomorrow.

After the movies, dinner was Asian. I got beef chop shuey. It wasn’t perfectly paleo because the sauce had soy in it, but not a bad compromise. With it being full of veggies and no rice it sure was good.

After dinner we ended up at the casino and I had Starbucks Refresh green tea instead of alcohol.

Looking forward to the cheat meal tomorrow with the Super Bowl. We will be spending it with the neighbors and they will be grilling so most it will be healthy…we’ll just see how it goes with the snacks and drinks 🙂

Paleo Challenge Day 27

Well it’s Friday…but it’s going to be a long Friday! I had to get to work just after 5 so no time for breakfast in the morning. I took a break at around 7 to grab some eggs, bacon and tomatoes with a hot tea because I was hungry!

Lunch today was leftover better butter chicken over organic greens and other lettuce. Then – I had 2 paleo cookies after to satiate my sweet tooth.

Tonight we went out to dinner for my mother-in-laws birthday. It was not a cheat meal and luckily they picked Texas Road House for the meal. I was able to get a 12 oz NY Strip with a garden salad (- cheese, – croutons) with lemon for the dressing and steamed carrots and broccoli for my sides. All on all it was a great meal.

Between going to work early and having the dinner to get to at night there was no time for crossfit. I will need to work some form of workout in this weekend…maybe another hike?

Paleo Challenge Day 26

Almost done with the week! Work has been crazy these past few days and I am really hoping that I can get to crossfit tomorrow, but it’s looking like I may not be. If not – guess I’ll have to find some way to get a workout this weekend.

Breakfast today was nice and simple. Two eggs scrambled with the left over bacon from last night. That held me off until around 9ish when I had the final pieces of strawberry breakfast bread. Yes – today was a leftover kind of day. Lunch…the last stuffed chicken breast that was left over with 1/2 a sweet potato. I also brought a snack for the afternoon: pepitas, almonds and dried cranberries that were soaked in strawberry juice that I got at the farmers market last week. They are soooo good!

Dinner tonight should be interesting. I have never tried to make this before, but everyone on the paleo challenge facebook page raves about it. I am making Everyday Paleo’s Better Butter Chicken. It has lots of spices, tomato paste and coconut milk so here’s hoping it tastes as good as everyone raves! I’ll be pairing that with steamed red chard and cauliflower rice (although the non-paleo person in the house will be having regular white rice). I’m looking forward to it!

One thing that I haven’t mentioned on here that I seem to have every single day is decaf tea. When we started the challenge they said that caffeine was allowed, but we should have it in small quantities. Also, they mentioned that coffee should be more of a treat than a daily thing. So – I decided to kick my HUGE caffeine habit and I think it has been going well. The decaf tea in the morning helps to get me up with something nice and hot and I really haven’t missed the pick me up that coffee gave me. After that first day of withdraw headaches I have been doing great!


Paleo Challenge Day 25

Ah – yeah for hump day!  

This morning started off with a nice, big breakfast.  I warmed up the bell pepper, shallot, mushroom, chicken mixture from last night in some coconut oil and then scrambled in 2 eggs.  Yum!  That held me over until 9am when I had 2 pieces of fruit leather: grape and strawberry.  

Lunch today was nothing special: leftover stuffed chicken breast w/ a side salad of organic greens, strawberries, cashews, sun-dried tomatoes with some lemon juice to act as a dressing.  Then, before crossfit I had a little bit of shredded chicken.  

Crossfit today was a blast.  After a quick warmup we had 15 minutes to get our one rep max snatch.  I need to work on getting low under the bar as I’m doing more of a power snatch than a traditional snatch.  My max was 95 pounds.  After that, we had Cindy!  20 Minute AMRAP: 5 pull ups, 10 push ups, 15 squats.  I got through 9 rounds + the pull ups.  My first 4 rounds were strict pull ups, the next 2 were w/ a thin black band and the last few were with an orange band.  Not too bad.  

I am really looking forward to dinner tonight.  I am making PaleOMG’s Easy Bacon Chicken Bowl!  It looks amazing.  I am pairing this with a side salad of organic greens, avocado, tomato, bell pepper and cucumber.  

I don’t think there will be dessert tonight.  I attempted the fried plantains last night, but they tasted much starchier than sweet.  So – guess I need to look up a recipe next time instead of free-wheeling it!  

Paleo Challenge Day 24

Ah – what a day. It’s only Tuesday and I am already, ready for the weekend. I’ve also been craving burgers and fries and bread…ah – just thinking about it!

Breakfast today was 2 eggs over medium with a slice of the strawberry breakfast bread. Today I made it until 9 before my larabar snack but was still hungry for lunch!

It was quite a big lunch today. I had half a stuffed chicken breast left over from last night along with some shredded chicken w/ pesto, sundried tomatoes and lettuce. It was all very good.

Dinner tonight is going to left over stuffed chicken again but I am also making some sautéed peppers with shallot and mushrooms for a side. Hopefully it turns out well.

Last night for dessert we split a paleo cookie with some mashed bananas I cooked up on the stove with cinnamon, nutmeg and honey. Tonight I’m hoping to try and make some fried smashed plantains…should be good!

Paleo Challenge Day 23

Yeah for Monday and crossfit!

Breakfast this morning was just a quick retake on the strawberry breakfast bar that I added a little crust to in some coconut oil. Then, I got hungry early and ate an all fruit leather …bar I guess – around 8. Eating my mornin snack this early made me very hungry around lunch time. It was tough but I held out until 1130ish before I had the last of the leftover eggplant lasagna. It was so good and I must make it again. Then, right before leaving for crossfit I had a grilled chicken breast to try and give me a pre-workout boost.

Then, came the fun, leg intensive WoD. After our warm up we had 15 minutes to practice the 3-position snatch. This was nice because I definitely need work on that. After that was the real workout: 50 walking lunges, 20 front squats (workout called for overhead squats but I modified at 75#), 20 mountain climbers per leg, 50 walking lunges, 15 front squats, 15 mountain climbers per leg, 50 walking lunges, 10 front squats, 10 mountain climbers per leg. It was intense and I was definitely shaking towards the end of my 14:22 time.

Dinner tonight is going to be nice and healthy. We are going to have chicken filled with asparagus, spinach, basil and Italian seasoning, rolled up and topped with thin slice of prosciutto. We are pairing that with sautéed kale and a nice salad – hopefully there are plenty of leftovers!
